Cultivation a Jerusalem artichoke or topinambur (Helianthus tuberosus) on garden is one of possibilities of reception of fructose. Inulin contains in tubers. Stability of inulin to a cold has special value: it remains in the tubers left in the earth practically all the winter long without damage. Therefore in the summer and in the autumn it is better to eat other fruit and the fresh greens, containing necessary carbohydrates and vitamins, and to keep topinambur in the earth till early spring. At this time in tubers process of partial hydrolysis of inulin to fructose goes. Therefore in the spring it becomes sweet. Good advice: do not cut off a skin of topinambur, carefully wash out and slice it. Jerusalem artichoke can be stored in the winter as a potato, better in small linen sacks, in a dry and cool place. It is necessary to protect carefully tubers from a moisture - they easily rot.

Topinambur is useful at treatment of a gout, gastroenteric frustration, an anaemia, urolithic illness. Such supplier of fructose is necessary for healthy people as an excellent prophylactic of diabetes.
